Hope you all enjoyed your final days of summer. We spent the weekend hiking, walking by the river and sipping Raspberry Limeade. It was very relaxing.
Here is the recipe I used to make Raspberry Limeade.
1/2 cup water
1/2 cup sugar
juice of three limes or about 1/4 cup of lime juice
1/4 cup raspberry puree*
1 1/2 cups of sparkling water
Combine water and sugar is a small sauce pan over medium heat. Heat until sugar is dissolved; stir every so often. Combine lime juice, simple syrup (sugar water) and raspberry puree and chill.
When ready to serve add chilled sparkling water. Add more lime juice or water to taste.
*To make the raspberry puree place raspberries and a splash or two of water in a cup. Use an immersion blender to puree. Work the puree through a fine mesh strainer to remove seeds.
Slightly adapted from Annie's Eats.
In case you are feeling adventurous, don't throw away the seeds. Dry them out for planting in the spring. I am following this tutorial and will be planting the seeds next year. We will see if they sprout.
