Who doesn't want to simplify?!

We just got back from our first camping trip of the year. It was so wonderful.

We kept things very simple for this trip. So instead of cooking breakfast we are bringing home-made granola, yogurt and fruit.

Here is my go-to granola recipe that I have been making for years. Hope your enjoy.

Honey Almond Granola 
Slightly adapted from A Couple Cooks
Makes about 10 cups
6 cups old fashioned rolled oats
1 cup slivered almonds
1/2 cup coconut
1/4 cup vegetable oil
scant 3/4 cup honey
2 teaspoon vanilla extract
1 teaspoon cinnamon
Just over 1/4 teaspoon salt

What To Do
1  Preheat the oven to 300°F.
2  In a large bowl, whisk 1/4 cup vegetable oil, 3/4 cup honey, 2 teaspoons vanilla extract, 1 teaspoon cinnamon, and 1/2 teaspoons salt.
3  Add 6 cups oats, 1 cup sliced almonds, and 1/2 cup slivered almonds. Stir with wooden spoon to evenly coat.
4  Spread onto a parchment paper-lined baking sheet and bake around 45 minutes until golden, removing the pan to stir every 15 minutes.
5  Remove from oven and let cool completely.
6  Store in air-tight container.
